Lorelei_11 and Doc now you have me think BBQ. I am going with the standard burger's, dogs, and chicken this coming weekend. But with all the talk of BBQ sandwiches has me thinking. I still have one container of my own BBQ sauce in the freezer. Maybe I'll get my meat guy to get me a nice pork roll and slow cook it in my smoker... :D

Oh, that sounds so good Jaded, so you make your own sauce and freeze it? My favorite is bbq chicken. I like pretty much anything bbq'ed. Smoked pork sounds really good. I'd be stuffed. :) Wish I lived closer to you.

It's a bit chilly this morning at 46 degrees with a light fog... :rolleyes: Just was looking at the extended weather forecast and it looks like we have a possibility of a rainy weekend here in Connecticut. That sucks and not in the good way... :(

Lorelei_11 I enjoy cooking and have many recipes that I make. In the summer I like cooking out on the outdoor grilles. My menu this holiday weekend is going to include hamburger, cheeseburgers, and hot dogs. I also have plans for a Polynesian glazed chicken breasts. Which is a citrus glaze. I like having a varity of different ways of preparing different meats and fishs. Actually next Saturday morning I am attending a seminar on cooking with different fresh herbs. The secret to good cooking is herbs, marinating, ande different rubs. With the holiday weekend coming up I am going to post some cook out recipes I enjoy. For those that enjoy BBQ sauces I would like to recommend my Tex/Mex BBQ sauce. None of these are difficult to make.

From Jaded’s Kitchen!

German Potato Salad.

4 cups of peeled, sliced golden Yukon potatoes.
8 slices of slices bacon.
¾ cup of chopped Vidalia onion.
3 table spoons of all-purpose flour.
¼ cup of sugar.
1 ½ teaspoons of salt.
1 teaspoon of celery seeds.
½ teaspoon black pepper.
1 cup of water.
¾ cup of vinegar.
3 chopped hard boiled eggs.

Cook bacon in a skillet until golden brown. Drain completely on a paper towel. Allow to cool then crumble into small pieces. Using the bacon fat sauté the chopped onions until transparent. Boil the potatoes on low until the potatoes are tender. Remove from water and place in a large mixing bowl. Combined the sugar, flour, salt, celery seeds, and pepper. Blend in the water and vinegar. Pour the ingredients into the skillet with the onions. Cook on low until the ingredients start to thicken and bubble. Add the crumbled bacon to the potatoes and the eggs. Pour the thickened sauce onto the potatoes and toss until coated evenly.
Best served hot. But, can be served cold.


Classic Potato Salad.

1 Cup of Hellman’s real mayonnaise or light mayonnaise or low fat mayonnaise.
2 tablespoons of vinegar.
1 ½ teaspoons of salt.
1 teaspoon of sugar.
½ teaspoon of black pepper.
5 to 6 medium Maine potatoes, peeled cubed, and boiled until tender.
1 cup of finely dice celery.
½ cup of chopped Vidalia onion.
3 hard boiled eggs, diced.

In a large bowl combined mayonnaise, vinegar, salt, sugar, and pepper. Add cooked potatoes, celery, onions, and eggs. Toss to coat evenly. Cover and chill to bend flavors.

Dijonnaise Potato Salad.

1 cup of Hellman’s real mayonnaise or light mayonnaise or low fat mayonnaise.
3 tablespoons of Grey Poupon Dijon Mustard.
2 tablespoons of freshly chopped dill or 1 ½ teaspoons of dillweed.
½ teaspoon salt.
½ teaspoon of black pepper.
1 ½ lbs of small red potatoes, peeled, quartered, and boiled until tender.
1 cup of diced radishes.
½ cup of chopped Vidalia onion.

In a large bowl combined mayonnaise, mustard dill, salt, and pepper. Toss in potatoes, radishes, and onions until coated evenly. Cover and chill to blend flavors.

Southern Creole Black Bean Salsa.

1 (15 oz) can of black beans, rinsed, cooked (boiled until tender), and drained.
½ cup of frozen corn, cooked (boiled until tender), and drained.
1 (35 oz) can of crushed plum tomatoes.
½ cup of chopped Vidalia onion.
1 tablespoon of fresh cilantro.
4 garlic cloves, pressed.
1 teaspoon of McCormick’s Creole seasoning.

Stir together all ingredients. Cover and chill to blend flavors.

Southern Barbecue Rub – create ribs that any BBQ pit boss would be proud of.

¼ cup of brown sugar.
2 tablespoons salt.
¼ cup of crushed black peppercorns.
¼ cup of paprika.
1 tablespoon of powered mustard.
2 tablespoons of garlic powder.
1 to 2 teaspoons of cayenne pepper, or to taste.

Combine all ingredients on a spice mill or bender. Can be stored in a air tight jar in a freezer for up to six months.

Recommended cuts: Beef brisket (marinate for 8 hours or over night), flank steak (6 to 8 hours), pork ribs (8 hours to overnight).

Tex/Mex Barbecue Sauce with Tequila.

3 tablespoons of chili oil.
2 cups of chopped fine Vidalia onions.
1 of each, red , green, and yellow bell peppers, seeded, and fine chopped.
2 tablespoons of fine chopped garlic.
1 cup of chile paste.
1 teaspoon of chile tepin, or 4 ground, chile japones.
¼ cup of cider vinegar.
1 cup of tomato sauce.
2 tablespoons of hot spicy mustard.
1 table spoon of soy sauce.
1 cup of packed brown sugar.
½ teaspoon of margarita salt or other salt.
¼ teaspoon of ground cumin.
½ teaspoon of cayenne pepper or to desire… :eek:
½ teaspoon of black pepper.
½ cup of Premium Jose Cuervo Especial Tequila.

In a large sauce pan heat chili oil over medium heat. Saute onion, bell peppers and garlic until soft. Stir in chile paste, cook, stir for approx. 1 minute. Add remaining ingredients WITH THE EXCPTION OF THE TEQUILA… :devil: Reduce heat and stir periodically. To test for proper consistency stand a spoon straight up in the pot. If it remains upright the sauce is the correct consistency. If not continue to cook on low. Allow the sauce to cool completely. The pour sauce into a blender fitted with steel blades. Add tequila at this point and blend until a smooth consistency.

“Hot” Pear Relish.

1 ½ cups of finely chopped pears (2 to 3 medium pears).
1 ½ cups finely chopped Vidalia onions.
1 ½ cups of finely chopped green sweet peppers (2 medium).
2 cups of cider vinegar.
3 fresh jalapeno peppers, seeded, and finely chopped. (optional)
1 tablespoon of Grey Poupon Dijon Mustard.
¾ teaspoon of ground turmeric.

In a large sauce pan combined pears, onions, and green sweet peppers. Stir in vinegar, sugar, jalapeno peppers (optional), mustard, and turmeric. Bring to a boil then reduce heat to a simmer. Do not cover. Cook slowly until most of the liquid has cooked off. Serve with beef or pork.

Red Onion Relish.

1 large red onion, thinly sliced, and separated into rings.
1 teaspoon of olive oil.
¼ cup of a dry red wine.
½ teaspoon dried sage, crushed.
¼ teaspoon salt.

In a medium size skillet cook onions in the olive oil until crispy tender (approx. 5 to 7 minutes). Carefully add the wine, sage, and salt. Stir to blend ingredients. Cook on low until liquid has evaporated. Serve with grilled steak of hamburgers.

Thats sounds great Jaded. I can't tolerate Cayenne pepper though, burns my stomach. I enjoy cooking very much. I'll leave the bbq to the guys, looks like you have it going on in that dept. :)

I've learned to cook many dishes, so haven't had much interest in trying new things in awhile. Although, your cooking classes do sound interesting.

I wanna go for ride. Just have fun, and stop in at some cool places. Some great places to eat, and have nice conversation. Great scenery, great company. Go for the weekend and perhaps camp, or stay in motels. A destination of a cabin by the lake would be fabulous.

I really doubt Im as horny as you.

But... I'm thinking of sex. Such a fun relaxed time always puts me in the mood again and again and again.

It's a beautiful morning here in Woodbury. I am ready to start the weekend now but unfortunately I can't. Tonight I have to cut the lawn. Tomorrow they are predicting in the low 90's... :) Trying to get everything done before the holiday weekend to get some ride'n time. I am still looking for a back rest. The summer is starting to sizzle... :devil:

Weather optional

It has rained like hell every afternoon here the mountains for the last three days... tomorrow its supposed to break, so I'm planning on getting some putt time ASAP to make up for the crappy few days we've had this week.

Wow it was a warm day for this early in the season... :rolleyes: The humidity is starting to roll in too. They revised the weather forcast to possible scattered shower for Sunday and showers on Monday. The lawn is cut so that's out of the way. I couldn't believe management at worked came over to me and asked me to work on Saturday. They wanted me to drive the 4700 International. The regular driver quit and they haven't been able to find a driver to replace him. They haven't found a driver to replace him because they only wanna pay $8 a hour... :rolleyes: Besided I have a seminar to attend Saturday morning. I have a life and at this point in my life I don't do the dance monkey dance anymore.

Well Dinny I how you managed to get a little putt putt in. I am going to get saddle time in this weekend no matter what happens... ;)

Well gang want to wish everybody a great evening. Only one more day before the weekend...WOOHOO... :nana:

Weather is looking great for the holiday weekend. The bikes are starting to roll in to town for Thunder now. Wooo hoo. Gonna be a great weekend. By Monday, though, I will be wore slap out for sure.
 
Hi all weather is hot as hell here . Sure feels good for a change and no snow in the forcast :nana: I got to ride in to work every day this week . It sure feels great to be on 2 wheels again . Plus great forcast for the weekend . Well time to roll . :D

Woohoo it's the weekend... :nana: All my chores are done and it's a free weekend for me. Temperature hit 93 degrees here in CT setting a new record for today. This weekend I am planning on getting saddle time. No particular direction just go and get lost. Then return home in the evenings to hamburgers, hot dogs, and chicken cooked out on the grille... :D Me time I need that right now... :)

Naaaa she'll be right mate...Just another 3 months and It'll be time for me to dust off the warm weather gear and watch the girls go by the window of the coffee shop wearing verry little :D :D .

But right now my human back rest wants to go for a burn

Good Morning all. 150 miles of ride time in yesterday wow. Wonderful. It was a hot one though wow. Weather man has promised us a continued beautiful Memorial day weekend.

Ride to the Wall for the Candelight Vigil was awesome. I would say about 3000 folks or more at the wall last night. Sunday promises, of course, to be even more packed.

Mmmm Bbq chicken, my favorite. Thats hot for this time of year. Its been normal temps here, which is nice. I'm hoping this summer is a milder one, I hate the heat.

I wrote a song this weekend. Well, 75% of one. Sometimes that happens, so maybe get it finished this weekend.

I haven't taken time to catch up on the thread yet, but wanted to reply to questions asked a while back...

Snake~ I live in southeast Ohio. I am East of Columbus and West of Wheeling WVa, close to I 70. And the reason I couldn't ride the bike till after the 23rd of May was because I was an idiot and got a DUI. I had restricted driving privileges, but my suspension was lifted on the 23rd and I am back to being free and driving where, when and what I want. My truck and bike have been sitting idle for some time. Then I found I have had a mouse in the carborator of the bike and am having a bit of a gas leak...guesses have been that the needle valve is stuck. Haven't fixed it or looked at it except for removing the carb cover and the air cleaner. But now that I am legal to ride...I think that will be a project for tomorrow.

Jaded ~ As far as my property is concerned, I do call it my little piece of God's heaven. It is very pretty out here. And was rather secluded till a couple weeks ago...the neighbor who had only a hunting retreat set up is now clearing his land and building a cabin and starting foundation for something else...I was bummed...his front yard will look down on my back yard...I just hated it cause now his place is completely visable...before I had privacy. Don't really need it, just enjoyed knowing I had it.

Hello to all the other bikers...I will proably catch up on the thread tomorrow. Worked 66 hrs this last week so didn't do much besides work, shower, sleep and work again.

Hope everyone is having a wonderful Memorial Day Weekend and remembers what this weekend is all about. Thanks to all our service men and women who help to keep our country "free."

Sounds really good. I'm o.k, doing better, but worn down from it all. The flu chest infection and the side effects from the antibiotic. Finally finished the antibiotic yesterday, and just tired now. I'm only about 90% better. So, seeing my Doctor this week and seeing what to do. I was only on a half dosage of antibiotic so I could stand the side effects. I have to see what she says we should do now.

I'm getting through it. I wrote 75% of a song, so that was nice. I was up really late last night. I'm doing a few things around here inbetween posting.

How have you been?

Oh I've been great you should come down here and go for a ride . That whould get rid of your germ . Nothing like bugs in your teeth to cure what ails you . :kiss:

I have a chest infection, because the blood pressure medication lowered my immune system. I was just starting to get over a flu, when I started the B.P meds.

As appealing as you make the sound... bugs in my teeth and all.

I mean that is... just... sooooooooooo, appealing. lol :p :p

I think I'll decline. :D :kiss:

What I want is, a soft bed, movies, maybe some pizza. Cuddles and kisses would be good too.
 
Too bad you're under the weather, Lori

I'm hosting open stage at the Northfork Bluegrass Festival in Hotchkiss CO on the 9-11th of June. Can't ride the bike cause I'm supplying the sound system, too. One riding weekend shot to hell, but I'll make up for it in August.
