I cook an outstanding turkey, either in the oven or smoked on the Webber. I have to cook my own, though, since my sister's house is big enough for the whole extended family, and my BiL can't cook a bird to save his life. He is very religious about it: it is either a fresh sacrifice or a burnt offering. The best thing they ever did was have the turkey delivered from a local restaurant.

I smoked my turkey last year when my stove broke 2 days before Thanksgiving. I don't think I can go back anymore...smoked was so so good.

I also have a Pit Barrel Cooker, and bought the turkey cooking set up. Hanging over the coals, with smoke from wood and the juices on the coals. So fucking good. (Also makes great tacos al Pastor, and shawarma with the same set up.)

I think it's like a mushroom paste

It has both mushroom paste (duxelles) and pâté.

I don't think you made it wrong.
Giblets are great for stock that you then use to make a nice smooth gravy.
I've heard of folks putting giblets in stuffing but I prefer sausage.

Sausage is the way to go!
