I'll never understand how I can be so aware when I wake up that I had a dream...or several even...but completely forget all details of what they were about.

That’s pretty normal. Unless you’re in the habit of keeping a dream diary which is when you mentally keep account of and remember everything about your dreams. A friend was in the habit of doing that because her parents always asked her what she dreamt of as a kid (she was the first child) so she got in the habit of remembering it. Fun fact, if you remember your dreams you can have lucid dreams. She would come to work and tell us how she changed the colours of her cat, called herself on the phone in the dream and even flew once.
